Should I choose AAC or M4A?

M4A, in almost every case. It holds the same AAC audio in a container that supports tags and reliable seeking. Bare .aac is for pipelines and tools that specifically want an elementary stream.

Is the original AAC track copied out untouched?

No. It is decoded and re-encoded, which is a second lossy pass. No option here lifts the original track out unchanged; extract to WAV if you need to avoid re-compression.

Why does my player show no title or duration?

Because a raw AAC stream has nowhere to store them. There is no container, so there are no tags and no index. M4A solves this.

What bitrate should I use?

192 kbps is a sound default, and AAC at that rate outperforms MP3 at the same. Exceeding the source track's bitrate gains nothing.

Is there a size limit?

About 2 GB on desktop. Discarding the video leaves a small output, so the ceiling is what the converter accepts rather than anything about the result.
